Washed vs Natural Coffee Processing
Processing method is the single biggest factor shaping an Ethiopian coffee's flavour profile after terroir.
Washed (Wet) Process
Cherries are de-pulped and fermented to remove mucilage before drying. The result is a cleaner, brighter cup that highlights floral and citrus notes.
Natural (Dry) Process
Whole cherries are dried on raised beds. The extended contact with the fruit produces heavier body, lower acidity, and pronounced berry and chocolate sweetness.
